Description
Crispy air-fried avocado egg rolls filled with creamy avocado and fresh ingredients. A quick and healthy snack or appetizer.
Ingredients
- 2 ripe avocados, diced
- 1/4 cup red onion, finely chopped
- 1/4 cup cilantro, chopped
- 1 tbsp lime juice
- 1/2 tsp salt
- 1/4 tsp black pepper
- 6 egg roll wrappers
- 1 tbsp water (for sealing wrappers)
- 1 tsp olive oil (for brushing)
Instructions
- Preheat air fryer to 375°F (190°C).
- In a bowl, mix avocados, red onion, cilantro, lime juice, salt, and pepper.
- Place 2 tbsp of filling in the center of each egg roll wrapper.
- Fold the sides inward, then roll tightly. Seal the edge with water.
- Brush rolls lightly with olive oil.
- Air fry for 8-10 minutes, flipping halfway, until golden brown.
- Serve warm with dipping sauce.
Notes
- Use ripe but firm avocados to prevent mushiness.
- Don’t overfill the wrappers to avoid bursting.
- For extra crispiness, spray rolls with oil before air frying.
