Make these easy air fryer banana cranberry muffins for a quick and healthy breakfast or snack.
Ingredients
- 1 cup mashed ripe bananas
- 1/2 cup dried cranberries
- 1 cup all-purpose flour
- 1/2 cup sugar
- 1/4 cup vegetable oil
- 1 egg
- 1 tsp baking powder
- 1/2 tsp baking soda
- 1/2 tsp vanilla extract
- 1/4 tsp salt
Instructions
- Preheat air fryer to 350°F (175°C).
- Mix mashed bananas, sugar, oil, egg, and vanilla in a bowl.
- Combine flour, baking powder, baking soda, and salt in another bowl.
- Add dry ingredients to wet ingredients and mix until just combined.
- Fold in cranberries.
- Spoon batter into greased muffin cups, filling 2/3 full.
- Air fry for 12-15 minutes until golden and a toothpick comes out clean.
- Cool for 5 minutes before serving.
Notes
- Use very ripe bananas for best flavor.
- Fresh cranberries can be used instead of dried.
- Store in an airtight container for up to 3 days.
