Description

Make these easy air fryer banana cranberry muffins for a quick and healthy breakfast or snack.


Ingredients

  • 1 cup mashed ripe bananas
  • 1/2 cup dried cranberries
  • 1 cup all-purpose flour
  • 1/2 cup sugar
  • 1/4 cup vegetable oil
  • 1 egg
  • 1 tsp baking powder
  • 1/2 tsp baking soda
  • 1/2 tsp vanilla extract
  • 1/4 tsp salt


Instructions

  1. Preheat air fryer to 350°F (175°C).
  2. Mix mashed bananas, sugar, oil, egg, and vanilla in a bowl.
  3. Combine flour, baking powder, baking soda, and salt in another bowl.
  4. Add dry ingredients to wet ingredients and mix until just combined.
  5. Fold in cranberries.
  6. Spoon batter into greased muffin cups, filling 2/3 full.
  7. Air fry for 12-15 minutes until golden and a toothpick comes out clean.
  8. Cool for 5 minutes before serving.

Notes

  • Use very ripe bananas for best flavor.
  • Fresh cranberries can be used instead of dried.
