Easy and healthy carrot muffins made in an air fryer. Perfect for breakfast or a snack.
Ingredients
- 1 cup grated carrots
- 1 cup all-purpose flour
- 1/2 cup sugar
- 1/4 cup vegetable oil
- 1 egg
- 1 tsp baking powder
- 1/2 tsp cinnamon
- 1/4 tsp salt
Instructions
- Preheat the air fryer to 350°F (175°C).
- Mix flour, sugar, baking powder, cinnamon, and salt in a bowl.
- In another bowl, whisk oil and egg, then add grated carrots.
- Combine wet and dry ingredients until just mixed.
- Spoon batter into greased muffin cups.
- Air fry for 12-15 minutes or until a toothpick comes out clean.
- Cool before serving.

- Use fresh carrots for best texture.
- Adjust sugar to taste.
- Check doneness at 12 minutes to avoid over-baking.
