Description
Crispy gingerbread biscotti made in the air fryer. Perfect for dipping in coffee or tea.
Ingredients
- 1 3/4 cups all-purpose flour
- 1 tsp ground ginger
- 1/2 tsp ground cinnamon
- 1/4 tsp ground cloves
- 1/4 tsp salt
- 1/2 tsp baking soda
- 1/4 cup molasses
- 1/4 cup brown sugar
- 1 large egg
- 1 tsp vanilla extract
- 1/4 cup chopped pecans (optional)
Instructions
- Preheat air fryer to 350°F (175°C).
- In a bowl, whisk flour, ginger, cinnamon, cloves, salt, and baking soda.
- In another bowl, mix molasses, brown sugar, egg, and vanilla.
- Combine wet and dry ingredients. Fold in pecans if using.
- Shape dough into a log on parchment paper.
- Air fry for 12-15 minutes until firm.
- Let cool for 10 minutes, then slice into 1/2-inch pieces.
- Air fry slices for 5-8 minutes, flipping halfway, until crisp.
Notes
- Store in an airtight container for up to a week.
- For softer biscotti, reduce second air fry time.
- Substitute walnuts for pecans if preferred.
