Description

Crispy gingerbread biscotti made in the air fryer. Perfect for dipping in coffee or tea.


Ingredients

  • 1 3/4 cups all-purpose flour
  • 1 tsp ground ginger
  • 1/2 tsp ground cinnamon
  • 1/4 tsp ground cloves
  • 1/4 tsp salt
  • 1/2 tsp baking soda
  • 1/4 cup molasses
  • 1/4 cup brown sugar
  • 1 large egg
  • 1 tsp vanilla extract
  • 1/4 cup chopped pecans (optional)


Instructions

  1. Preheat air fryer to 350°F (175°C).
  2. In a bowl, whisk flour, ginger, cinnamon, cloves, salt, and baking soda.
  3. In another bowl, mix molasses, brown sugar, egg, and vanilla.
  4. Combine wet and dry ingredients. Fold in pecans if using.
  5. Shape dough into a log on parchment paper.
  6. Air fry for 12-15 minutes until firm.
  7. Let cool for 10 minutes, then slice into 1/2-inch pieces.
  8. Air fry slices for 5-8 minutes, flipping halfway, until crisp.

Notes

  • Store in an airtight container for up to a week.
  • For softer biscotti, reduce second air fry time.
  • Substitute walnuts for pecans if preferred.
