Description
Crispy gluten-free fritters made in an air fryer for a healthier snack or side dish.
Ingredients
- 1 cup gluten-free flour
- 1 tsp baking powder
- 1/2 tsp salt
- 1/4 tsp black pepper
- 1 egg
- 1/2 cup milk (dairy or plant-based)
- 1 cup shredded zucchini (squeezed dry)
- 1/4 cup grated parmesan cheese
- 1 tbsp olive oil
Instructions
- Preheat the air fryer to 375°F (190°C).
- In a bowl, mix gluten-free flour, baking powder, salt, and black pepper.
- Add egg, milk, and olive oil to the dry ingredients. Stir until combined.
- Fold in shredded zucchini and grated parmesan cheese.
- Scoop tablespoon-sized portions of the batter onto a lined air fryer tray.
- Cook for 10-12 minutes, flipping halfway, until golden brown.
- Serve warm with your favorite dipping sauce.

- Pat the zucchini dry to prevent soggy fritters.
