Description
Fluffy pancakes with a hint of lemon and creamy ricotta, cooked quickly in an air fryer.
Ingredients
- 1 cup all-purpose flour
- 1 tbsp sugar
- 1 tsp baking powder
- 1/2 tsp baking soda
- 1/4 tsp salt
- 1/2 cup ricotta cheese
- 1 large egg
- 1/2 cup milk
- 1 tbsp lemon zest
- 1 tbsp lemon juice
- 1 tbsp melted butter
Instructions
- Mix flour, sugar, baking powder, baking soda, and salt in a bowl.
- In another bowl, whisk ricotta, egg, milk, lemon zest, lemon juice, and melted butter.
- Combine wet and dry ingredients until just mixed.
- Preheat air fryer to 350°F (175°C).
- Drop batter in small rounds onto parchment paper in the air fryer basket.
- Cook for 5-7 minutes until golden brown.
- Flip and cook for another 2-3 minutes.
- Serve warm with syrup or fresh fruit.

- Do not overmix the batter to keep pancakes fluffy.
