Ingredients

  • 4 medium russet potatoes
  • 1 tbsp olive oil
  • 1/2 tsp salt
  • 1/2 tsp black pepper
  • 1 cup shredded cheddar cheese
  • 4 slices cooked bacon, crumbled
  • 2 green onions, sliced
  • 1/4 cup sour cream (optional)

Instructions

  1. Preheat the air fryer to 400°F (200°C).
  2. Wash and dry the potatoes, then pierce them with a fork.
  3. Rub potatoes with olive oil, salt, and pepper.
  4. Air fry the potatoes for 30-35 minutes until tender.
  5. Let them cool slightly, then cut in half and scoop out the flesh, leaving a 1/4-inch shell.
  6. Fill each potato skin with cheese and bacon.
  7. Air fry again for 3-5 minutes until cheese melts.
  8. Top with green onions and sour cream before serving.

Notes
