Description
A quick and delicious mango pudding made in an air fryer, perfect for a sweet treat.
Ingredients
- 2 ripe mangoes, peeled and diced
- 1 cup heavy cream
- 1/2 cup sugar
- 1/4 cup cornstarch
- 1 tsp vanilla extract
- 1/2 cup water
Instructions
- Blend mangoes, heavy cream, sugar, and vanilla extract until smooth.
- Mix cornstarch with water to form a slurry.
- Combine mango mixture with cornstarch slurry in a saucepan. Cook on low heat until thickened.
- Pour mixture into ramekins and place in the air fryer.
- Cook at 320°F for 15 minutes.
- Let cool, then refrigerate for at least 2 hours before serving.
Notes
- Use ripe mangoes for the best flavor.
- Adjust sugar based on sweetness of mangoes.
- Can be stored in the fridge for up to 3 days.
