Description
A quick and easy potato salad made in the air fryer. Crispy on the outside, tender on the inside, and packed with flavor.
Ingredients
- 1.5 lbs (680g) baby potatoes, halved
- 2 tbsp olive oil
- 1 tsp salt
- 1/2 tsp black pepper
- 1/2 tsp garlic powder
- 1/4 cup mayonnaise
- 1 tbsp Dijon mustard
- 1 tbsp apple cider vinegar
- 1/4 cup chopped red onion
- 2 tbsp chopped fresh parsley
Instructions
- Preheat air fryer to 400°F (200°C).
- Toss potatoes with olive oil, salt, pepper, and garlic powder.
- Air fry for 15-18 minutes, shaking halfway, until golden and tender.
- Let potatoes cool slightly.
- In a bowl, mix mayonnaise, mustard, and vinegar.
- Add potatoes, red onion, and parsley. Toss to coat.
- Chill for 30 minutes before serving.
Notes
- For extra crispiness, air fry an extra 2-3 minutes.
- Substitute Greek yogurt for mayonnaise for a lighter version.
- Add chopped pickles or bacon for extra flavor.
