Description

A quick and easy potato salad made in the air fryer. Crispy on the outside, tender on the inside, and packed with flavor.


Ingredients

  • 1.5 lbs (680g) baby potatoes, halved
  • 2 tbsp olive oil
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1/2 tsp garlic powder
  • 1/4 cup mayonnaise
  • 1 tbsp Dijon mustard
  • 1 tbsp apple cider vinegar
  • 1/4 cup chopped red onion
  • 2 tbsp chopped fresh parsley


Instructions

  1. Preheat air fryer to 400°F (200°C).
  2. Toss potatoes with olive oil, salt, pepper, and garlic powder.
  3. Air fry for 15-18 minutes, shaking halfway, until golden and tender.
  4. Let potatoes cool slightly.
  5. In a bowl, mix mayonnaise, mustard, and vinegar.
  6. Add potatoes, red onion, and parsley. Toss to coat.
  7. Chill for 30 minutes before serving.

Notes

  • For extra crispiness, air fry an extra 2-3 minutes.
  • Substitute Greek yogurt for mayonnaise for a lighter version.
  • Add chopped pickles or bacon for extra flavor.
