Description
Make crispy air fryer potato skins with this easy recipe. Perfect as a snack or appetizer.
Ingredients
- 4 medium russet potatoes
- 1 tbsp olive oil
- 1/2 tsp salt
- 1/4 tsp black pepper
- 1/2 cup shredded cheddar cheese
- 2 tbsp chopped green onions
- 2 tbsp sour cream (optional)
Instructions
- Preheat air fryer to 400°F (200°C).
- Wash potatoes and prick with a fork. Microwave for 5-7 minutes until tender.
- Cut potatoes in half lengthwise. Scoop out the flesh, leaving a 1/4-inch shell.
- Brush potato skins with olive oil and season with salt and pepper.
- Air fry for 10-12 minutes until crispy.
- Sprinkle cheese on top and air fry for 2 more minutes until melted.
- Top with green onions and serve with sour cream.
Notes
- Store leftover potato flesh for mashed potatoes.
- Add cooked bacon bits for extra flavor.
- For crispier skins, air fry an extra 2 minutes.
