Description

Make crispy air fryer potato skins with this easy recipe. Perfect as a snack or appetizer.


Ingredients

  • 4 medium russet potatoes
  • 1 tbsp olive oil
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 1/2 cup shredded cheddar cheese
  • 2 tbsp chopped green onions
  • 2 tbsp sour cream (optional)


Instructions

  1. Preheat air fryer to 400°F (200°C).
  2. Wash potatoes and prick with a fork. Microwave for 5-7 minutes until tender.
  3. Cut potatoes in half lengthwise. Scoop out the flesh, leaving a 1/4-inch shell.
  4. Brush potato skins with olive oil and season with salt and pepper.
  5. Air fry for 10-12 minutes until crispy.
  6. Sprinkle cheese on top and air fry for 2 more minutes until melted.
  7. Top with green onions and serve with sour cream.

Notes

  • Store leftover potato flesh for mashed potatoes.
  • Add cooked bacon bits for extra flavor.
