Description

Easy and healthy pumpkin muffins made in an air fryer. Perfect for a quick breakfast or snack.


Ingredients

  • 1 cup pumpkin puree
  • 2 eggs
  • 1/4 cup maple syrup
  • 1/4 cup melted coconut oil
  • 1 tsp vanilla extract
  • 1 1/2 cups almond flour
  • 1 tsp baking powder
  • 1/2 tsp baking soda
  • 1 tsp cinnamon
  • 1/2 tsp nutmeg
  • 1/4 tsp salt


Instructions

  1. Preheat air fryer to 320°F (160°C).
  2. In a bowl, mix pumpkin puree, eggs, maple syrup, coconut oil, and vanilla.
  3. Add almond flour, baking powder, baking soda, cinnamon, nutmeg, and salt. Stir until combined.
  4. Pour batter into greased muffin cups or silicone molds, filling 3/4 full.
  5. Place in the air fryer basket and cook for 12-15 minutes, or until a toothpick comes out clean.
  6. Let cool before serving.

Notes

  • Use pure pumpkin puree, not pumpkin pie filling.
  • Adjust sweetness to taste by adding more or less maple syrup.
  • Store leftovers in an airtight container for up to 3 days.
