Description

A healthy and flavorful dish of bell peppers stuffed with quinoa, vegetables, and spices, cooked in an air fryer for a crispy finish.


Ingredients

  • 4 large bell peppers (any color)
  • 1 cup cooked quinoa
  • 1/2 cup black beans, drained and rinsed
  • 1/2 cup corn kernels
  • 1/4 cup diced red onion
  • 1/4 cup shredded cheese (optional)
  • 1 tsp olive oil
  • 1 tsp chili powder
  • 1/2 tsp cumin
  • 1/2 tsp garlic powder
  • Salt and pepper to taste


Instructions

  1. Preheat the air fryer to 375°F (190°C).
  2. Cut the tops off the bell peppers and remove the seeds and membranes.
  3. In a bowl, mix the quinoa, black beans, corn, red onion, olive oil, chili powder, cumin, garlic powder, salt, and pepper.
  4. Spoon the mixture into the bell peppers and top with cheese if using.
  5. Place the stuffed peppers in the air fryer basket and cook for 12-15 minutes.
  6. Check for doneness—the peppers should be tender and the filling hot.
  7. Serve immediately.
