Description
Air fryer raspberry lemon bars combine tart lemon and sweet raspberries in a crispy crust. They are quick to make and perfect for a light dessert.
Ingredients
- 1 cup all-purpose flour
- 1/4 cup powdered sugar
- 1/2 cup unsalted butter, melted
- 2 large eggs
- 3/4 cup granulated sugar
- 1/4 cup lemon juice
- 1 tbsp lemon zest
- 1/2 cup fresh raspberries
- 1 tbsp all-purpose flour (for raspberries)
Instructions
- Preheat air fryer to 320°F (160°C).
- Mix flour, powdered sugar, and melted butter to form the crust. Press into a greased baking pan.
- Air fry the crust for 8 minutes until lightly golden.
- Whisk eggs, granulated sugar, lemon juice, and lemon zest for the filling.
- Toss raspberries with flour and fold into the filling.
- Pour filling over the crust and air fry for 12-15 minutes until set.
- Cool completely before slicing.
