Description

A simple and healthy way to enjoy mixed root vegetables using an air fryer. Perfect as a side dish or snack.


Ingredients

  • 2 cups mixed root vegetables (carrots, parsnips, sweet potatoes, beets), chopped into 1-inch pieces
  • 1 tbsp olive oil
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 1/2 tsp garlic powder
  • 1/2 tsp dried rosemary


Instructions

  1. Preheat your air fryer to 375°F (190°C).
  2. In a large bowl, toss the chopped vegetables with olive oil, salt, pepper, garlic powder, and rosemary.
  3. Spread the vegetables in a single layer in the air fryer basket.
  4. Cook for 15-20 minutes, shaking the basket halfway through, until the vegetables are tender and crispy.
  5. Serve immediately.
