Ingredients

  • 2 boneless, skinless chicken breasts
  • 1 cup chopped spinach
  • 1/2 cup chopped artichoke hearts
  • 1/4 cup cream cheese
  • 1/4 cup shredded mozzarella cheese
  • 1 clove garlic, minced
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 tablespoon olive oil


Instructions

  1. Preheat air fryer to 375°F (190°C).
  2. In a bowl, mix spinach, artichoke hearts, cream cheese, mozzarella, garlic, salt, and pepper.
  3. Cut a pocket into each chicken breast and fill with the spinach-artichoke mixture.
  4. Secure the pockets with toothpicks if needed.
  5. Brush chicken with olive oil and place in the air fryer basket.
  6. Cook for 18-20 minutes, flipping halfway, until chicken reaches 165°F (74°C).
