Description

A delicious and easy-to-make sticky toffee pudding cooked in an air fryer for a quick dessert.


Ingredients

  • 200g dates, pitted and chopped
  • 250ml boiling water
  • 1 tsp baking soda
  • 75g unsalted butter, softened
  • 100g brown sugar
  • 2 eggs
  • 150g self-raising flour
  • 1 tsp vanilla extract
  • For the sauce: 100g brown sugar, 50g butter, 150ml double cream


Instructions

  1. Preheat your air fryer to 160°C.
  2. Soak the chopped dates in boiling water with baking soda for 10 minutes.
  3. Cream the butter and sugar together until light and fluffy.
  4. Beat in the eggs one at a time, then fold in the flour and vanilla.
  5. Mix in the soaked dates and their liquid.
  6. Pour the batter into a greased baking dish that fits in your air fryer.
  7. Air fry for 25-30 minutes until a skewer comes out clean.
  8. For the sauce, melt the butter and sugar in a pan, then stir in the cream and simmer for 2-3 minutes.
  9. Pour the sauce over the pudding before serving.

Notes

  • You can use a food processor to blend the dates for a smoother texture.
  • Check the pudding after 20 minutes to avoid overcooking.
  • Serve warm with extra sauce and ice cream if desired.
