Description
A quick and easy dessert made with fresh strawberries and rhubarb, topped with a crispy oat crumble. Cooked in an air fryer for a healthier twist.
Ingredients
- 2 cups strawberries, hulled and sliced
- 2 cups rhubarb, chopped
- 1/4 cup granulated sugar
- 1 tbsp cornstarch
- 1 tsp lemon juice
- 1/2 cup rolled oats
- 1/4 cup all-purpose flour
- 1/4 cup brown sugar
- 1/4 tsp cinnamon
- 2 tbsp cold butter, cubed
Instructions
- Preheat air fryer to 350°F (175°C).
- In a bowl, mix strawberries, rhubarb, granulated sugar, cornstarch, and lemon juice.
- Transfer the fruit mixture to an air fryer-safe baking dish.
- In another bowl, combine oats, flour, brown sugar, and cinnamon.
- Cut in the butter until the mixture resembles coarse crumbs.
- Sprinkle the crumble topping evenly over the fruit.
- Air fry for 15-20 minutes until the topping is golden and the fruit is bubbly.
- Let cool slightly before serving.
Notes
- Adjust sugar based on the sweetness of your fruit.
- Serve warm with ice cream or whipped cream.
- Use gluten-free flour if needed.
