Description
A healthy and flavorful vegetable dish made in the air fryer. Perfect as a side or main course.
Ingredients
- 1 medium eggplant, diced
- 1 medium zucchini, diced
- 1 medium yellow squash, diced
- 1 red bell pepper, diced
- 1 yellow bell pepper, diced
- 1 small red onion, diced
- 2 cloves garlic, minced
- 2 tbsp olive oil
- 1 tsp dried thyme
- 1 tsp dried basil
- 1/2 tsp salt
- 1/4 tsp black pepper
- 1/4 cup grated Parmesan cheese (optional)
Instructions
- Preheat the air fryer to 375°F (190°C).
- In a large bowl, combine eggplant, zucchini, yellow squash, bell peppers, red onion, and garlic.
- Drizzle with olive oil and sprinkle with thyme, basil, salt, and black pepper. Toss to coat evenly.
- Transfer the vegetables to the air fryer basket in a single layer. Cook for 15 minutes, shaking the basket halfway through.
- Sprinkle with Parmesan cheese if desired and serve warm.
Notes
- Cut vegetables into even sizes for uniform cooking.
- Adjust seasoning to taste.
- Store leftovers in an airtight container for up to 3 days.
