Delicious apricot coconut bars made in an air fryer. These bars are easy to prepare and perfect for a quick snack or dessert.
Ingredients
- 1 cup dried apricots, chopped
- 1 cup shredded coconut
- 1/2 cup almond flour
- 1/4 cup honey
- 1 egg
- 1 tsp vanilla extract
- 1/4 tsp salt
Instructions
- Preheat your air fryer to 350°F (175°C).
- In a bowl, mix apricots, coconut, almond flour, honey, egg, vanilla, and salt.
- Press the mixture into a greased baking pan that fits in your air fryer.
- Air fry for 12-15 minutes until golden brown.
- Let it cool before cutting into bars.

- Store in an airtight container for up to 5 days.
- You can substitute honey with maple syrup for a vegan version.
